We jumped on the viral trend, hacking a weeknight-friendly version of the Turkish spiced meat that’s traditionally made on a rotisserie. Instead, roll seasoned ground beef between parchment sheets before cooking in the oven alongside some veggies. Turns out the method is genius, resulting in juicy, tender meat that’s destined to become your new favorite wrap filling.

Ingredients

  • 1mediumwhite onion, cut into chunks (1 1/2 cups)

  • 2Tbsp.tomato paste

  • 2Tbsp.whole milk plain Greek yogurt

  • 4garliccloves, peeled

  • 1Tbsp.ground cumin

  • 2tsp.paprika

  • 1/2tsp.crushed red pepper (optional)

  • 1 1/2lb.85% lean ground beef

  • 1lb.roma tomatoes, cut into quarters

  • 1mediumred onion, halved and cut into strips

  • 1mediumgreen bell pepper, cut into strips, or 2 banana peppers, sliced into rings

  • 1/4cupbutter

  • 18-oz. cantomato sauce

  • 412x9-inchsoft cracker breads (lavash)

  • Shredded lettuce (optional)

  • Yogurt Sauce

Directions

  1. Place a rack in the top third of the oven. Preheat oven to 400°F. Line an 18x13-inch baking pan and a 15x10-inch baking pan with foil.

  2. In a food processor combine white onion, tomato paste, yogurt, garlic, cumin, paprika, 1 tsp. salt, 1/2 tsp. ground black pepper, and the crushed red pepper (if using). Pulse until a rough paste forms. In a medium bowl combine onion paste and ground beef; gently mix with clean hands until well combined.

  3. Divide beef mixture into three equal portions. Place one portion between two 18x12-inch sheets of parchment paper. Using a rolling pin, roll beef between parchment sheets into a very thin rectangle, leaving a 1-inch border at edges of paper. Remove top sheet of paper. Starting from a short side, roll meat and parchment together into a log. Place log, seam side down, in the 15x10-inch pan. Repeat with the remaining meat portions and additional sheets of parchment paper.

  4. Place tomatoes, red onion, and bell pepper in the 18x13-inch pan. Drizzle with 1 Tbsp. olive oil, then sprinkle with 1/4 tsp. each salt and ground black pepper.

  5. Bake both pans until the meat is browned, cooked through, and registers 160°F in the thickest part of a roll and vegetables are tender, about 20 minutes. When meat rolls are cool enough to handle, unroll them, discarding parchment paper; tear meat into pieces. Add meat to pan with the vegetables. Preheat broiler.

  6. Meanwhile, for sauce, in a small saucepan melt butter over medium. Stir in tomato sauce and 1/4 tsp. salt. Bring just to boiling; simmer 1 minute. Remove from heat.

  7. Broil meat and vegetables on the top rack until browned and vegetables are slightly charred, 2 to 3 minutes.

  8. To assemble, spread each lavash with 1 to 2 Tbsp. of the tomato sauce. Top each with meat, roasted vegetables, and, if you like, some shredded lettuce. Roll up tightly, tucking in filling as you roll. Cut rolls in half and serve with Yogurt Sauce and any remaining tomato sauce.

Yogurt Sauce

In a medium bowl whisk together 1/2 cup plain whole milk Greek yogurt; 1 Tbsp. lemon juice; 1 garlic clove, minced; and 1/4 tsp. each salt and ground black pepper. Season to taste with lemon zest and/or additional black pepper.
